So in an ever growing quest to try new things,
Dopey introduced me to
Quinoa on her blog post about the best dinner ever that she made.
I'm not thinking about going full on vegetarian, but I am always looking for healthier alternatives to my current diet. So I thought I'd try this quinoa stuff out last night.....
I used spaghetti squash for my experimental dinner, along with a baked salmon. I put in a yam, green and red peppers, garden fresh garlic and onion, and a zucchini in a roasting pan with a vegetable broth.
And Dopey wasn't kidding, this stuff is good! Quinoa will be a new routine staple for me. Cheers!
